The golden ratio is an irrational number that represents the perfect proportion.
It is found in nature: in the veins of tree leaves, in the shell of snails and in sunflowers.
An aesthetic character is also attributed to objects whose measurements follow the golden ratio, as is the case of the ovoid tanks where this wine is aged.
DESCRIPTION:
Red wine made from Tempranillo grapes with an average age of 50 years. Aged in new French oak barrels for 14 months
TASTING NOTES:
Cherry-garnet colour. Aromas of black fruit, notes of nuts and spices with a soft toasted finish. Intense, powerful, with a spicy and elegant flavour on the palate.
SERVICE TEMPERATURE:
16 - 18ºC
ELABORATION:
The grapes are harvested in plots differentiated by their quality. The grapes are picked at their optimum point of ripeness in 12 kg boxes and cooled to 3 ºC in a cold chamber; 24 hours later they are selected and destemmed without crushing. The grapes are placed in inverted truncated cone-shaped tanks by gravity and undergo cold skin maceration for 5 days without fermentation, in order to implement the primary aromas. Fermentation takes place at a maximum temperature of 28 ºC in order to extract all the quality of the grapes. The malolactic fermentation takes place partly in barrels, and partly in ovoid concrete and stainless steel tanks. The aging takes place in new French oak barrels and concrete tanks for 14 months.
