Descripción
Of humble origins, like those of the people who have been cultivating it for centuries, the Manzanilla Cacereña olive oil is one of the most appreciated varieties among all those existing in Spain.
Single-variety Manzanilla Cacereña oils are not available in supermarket promotions or sold in bulk by exporters. On the contrary, these oils are produced in small, clean and modern factories, which in some cases have even preserved their ancestral mills and occasionally transformed them into museums.
Characteristics
- The quality of olive oil depends largely on the state of the olives at the time of harvesting and oil production.
- When the conditions of the harvesting and processing process are adequate, the oil presents:
- Adequate Fatty Acid Index (Organic AQ5 0.17%)
The degree of acidity indicates the deterioration that the olives have suffered in the olive oil production process (some type of mistreatment, either by pests before harvesting, during the olive harvesting process itself or during subsequent transport).
- Low Peroxide Index (Organic AQ5 4.4 meq/kg) If the olive is mistreated during the harvesting process or the olive oil is not adequately protected from sunlight, peroxides are produced. These peroxides reduce the antioxidant effects of olive oil and therefore also its beneficial effects.
- Good quality fruity aroma (presence of hexanols), distinguishing between:
- Almond-like with a scent of dried fruits (hexanal).
- Green grass.
- Banana-like scent (hexenyl acetate).
AQ5 Eco oil is obtained from century-old olive trees planted on vertical terraces overlooking the Duero River, in the heart of the Las Arribes del Duero Natural Park.
Manzanilla Cacereña grown in Las Arribes del Duero (Salamanca) offers oils that exhibit quite a bit of body, with herbaceous, spicy and bitter aromas in the medium-high range and aromas of other ripe fruits, especially sweet banana.
The olives are not touched by hand, from the tree to the olive mill. They are extracted at temperatures below 27º, which ensures the preservation of antioxidants and the non-destruction of the other organoleptic and chemical components.
RECOMMENDED USES
Appreciated for raw food. Essential component in breakfasts and toasts. Dressing for fresh salads, vegetables, fish, capricciosa, truffles, etc. Enhances the flavour of hams, cured meats, sausages and cheeses.
