With bright colours ranging from purple to pink, the cut has a marbled appearance due to the infiltration of fat from the melting of the acorn. Due to its excellent meat, its homogeneous texture, delicate flavour and pleasant aroma, the Iberian pork loin is considered the most noble piece of international charcuterie.
