Iberian Acorn-fed Shoulder (75% Iberian Breed) - Red Seal
Size: 5-5.5kg
It comes from the front legs of pigs. It is a smaller piece than ham but provides an exquisite taste to the most demanding palates since, by having the ideal balance between fat and lean, its meat is even juicier.

Is my shoulder very fatty ?:
The Iberian acorn-fed shoulder (75% RI) always has a layer of external fat (yellow bacon) thanks to which the shoulder can withstand all the months necessary for its correct curing.
The total utilization of the palette can vary between 28% and 30%.
This means that not all pieces are the same and that they can vary by up to 400 grams of meat up or down on a 5kg shoulder, and that normally there is about 1.4kg of meat left on a 4.5-5kg shoulder once we have removed the bone and the external fat.
Normally, the larger the shoulder, the higher percentage of meat it will have.
In any case, if you believe that the performance of your pallet is clearly lower than these percentages, do not hesitate to contact us.
